Workday noodles are the perfect start to any day. In fact, I start every day with a bowl of these spicy, warming, and delicious noodles. Yes, it’s true, this is my breakfast every morning!

These noodles are so simple and quick to make and leave you feeling satisfied and charged to face the day. Just four ingredients and you are ready to go. A key ingredient is chili bean paste (toban djan) which is a fermented chili and soybean sauce – it is irreplaceable as it provides much of the spice and umami kick.

These are called workday noodles as they are my usual breakfast and must be eaten with a fork! Chopsticks are reserved for holiday noodles which are eaten on weekends or special occasions – recipe to come! Of course workday noodles can be eaten at any time of the day, or even multiple times a day 😉

  1. Bring a small pan of water to the boil. Add the noodles and cook according to the packet instructions

    Most instant noodles will take about 3 minutes to cook.
  2. Once cooked drain the noodles reserving 2 tbsp of the cooking liquid.

  3. Return the noodles and reserved liquid to the pan. Add 1/2 tsp of cayenne chili powder, 1 tbsp of light soy sauce and 1 tsp of chili bean paste.

  4. Stir to incorporate the ingredients and serve immediately.
