Char siu chicken

Char siu chicken is a take on the more traditional char siu pork - a kind of Chinese barbecued meat. The marinade is sweet and salty giving the meat a wonderful char. Red food coloring is usually used to give the char siu its distinctive hue but feel free to leave it out.

This char siu chicken can be served with stir-fried noodles or as part of a wider meal with stir-fried vegetables, mabo dofu and plain rice.

Ingredients
  • 400 g Chicken thigh skinned and cleaned
  • 1/2 tsp five spice powder
  • 1/2 tsp white pepper powder
  • 1 tsp sesame oil
  • 1 tbsp light soy sauce
  • 1 tbsp rice wine
  • 1 tbsp hoisin sauce
  • 3 clove garlic crushed
  • 1/2 tsp red food colouring (optional)
  • 2 tsp honey
  • salt to taste
Instructions
  1. Add all of the ingredients to a bowl and mix to make sure the chicken is fully coated.

  2. Cover and leave to marinade in the fridge for at least 2 hours or up to overnight.

  3. When ready to cook turn your barbecue grill to high (or over hot coals).

  4. Place the chicken over the hottest part and leave to cook until the meat starts to char. Then flip the meat and do the same for the other side. Try to move the meat as little as possible to develop good color.

  5. Check for doneness and then serve sliced alongside your favourite dishes.
