This chickpea salad adds pep to any meal. The crunch of the vegetables and tanginess of the dressing goes so well with the earthiness of the chickpeas. This dish takes no time to put together making it the perfect side.

This chickpea salad goes with a variety of flavours, from kebabs or chicken tikka to a simple grilled fish. This salad also pairs well with any barbecue feast.

Ingredients
  • 240 g canned chickpeas
  • 1/4 red pepper chopped
  • 1/4 green pepper chopped
  • 1/4 red onion very finely diced
  • 1/4 cucumber chopped
  • 1 red chili chopped
  • 2 tbsp olive oil
  • 1/2 lemon juiced
  • 2 tbsp chopped coriander
  • salt and pepper to taste
Instructions

    Add all of the ingredients to a bowl and mix thoroughly. Check for seasoning.

  2. Leave to rest in the fridge for about an hour.

  3. Remove from the fridge 10 minutes before eating. Serve with your favourite kebab, fish or barbecue items.
