This garlic bread is a lighter alternative to the usual baguette style. The dough is a simple pizza dough that you would use for pizzas or pan pizza but with just olive oil and garlic for a topping.
The dough is easily frozen so you can have garlic bread whenever you want! Serve this garlic bread with your favourite pasta such as lamb and olive puttanesca, black kale and broccolini, or any other.

Prepare your dough according to this recipe for pizza dough. You need 1 ball of the dough. If using frozen dough make sure it is fully defrosted and fridge cold.
Keep the dough in the fridge until you need to use it otherwise it will be too soft. -
Place a pizza stone in the oven and pre-heat it to 220ºC with fan.

Add the garlic to the olive oil and leave to infuse while you prepare the dough.

Take your dough from the fridge and flatten into a small disc. Hold up the dough between your fingers and thumbs in the centre of the disc. Press the dough slowly turning the dough and moving your fingers towards the edge. The weight of the dough will help to stretch the dough.

Sprinkle some semolina flour onto a pizza shovel. Place the dough on to the shovel.

Use your fingers to continue spreading the dough on the pizza shovel. Thick areas can be lifted and stretched. Thin areas or holes can be pressed back together.

Shuffle the pizza shovel back and forth to make sure the dough is not stuck to it. if it is sticking life the dough and add more semolina flour.

Spoon the garlic and olive oil mixture evenly across the dough. Crack some salt on top.

Using a shuffling action push the dough onto the pizza stone in the oven.
This can take a bit of practice but aim for the centre of the stone. -
Cook the garlic bread for 9 minutes until the top starts to brown. Remove and cut into 6 pieces.

Serve with your favourite pasta, steak or other delicious meal.
