This recipe for puff pastry is so easy and versatile. It can be used for many different kinds of savoury pies including Beef and Guinness pie, hand pies, and with the addition of turmeric Jamaican patties.

Don’t worry about being too careful with the dough. As shown in the pictures this pastry is rough but easily comes together in the end to create a beautiful pie.

This recipe is classed as 1 portion as the accompanying recipes all use one portion of this dough. Depending on the recipe it can serve 4-6 people.

  1. Place the flour and salt into a large mixing bowl.

  2. Cut the butter into 1cm chunks and add to the flour. Smear the butter between your thumb and fingers to incorporate with the flour. Don't worry about leaving large lumps - it will add to the flaky texture.

  3. Add a water a little at a time and stir into the flour butter mixture. Squeeze the mixture together to create a loose ball

    Don't worry if there are dry bits of flour - they will get worked into the dough later.
  4. Remove the rough ball of dough from the bowl and wrap tightly in cling film. Place in the fridge for 30 minutes to rest.

  5. Remove the dough from the fridge after 30 minutes and place on a lightly floured surface. Roll out to about 1-2 cm thick. At this stage the dough may not be fully together and you will see butter lums - don't worry!

  6. Fold the dough into 3 and then 3 again. Re-roll the dough and repeat the action. This stage will add layers to the dough.

  7. At this stage the dough is ready to be used in recipes such as Beef and Guinness pie.
