These quick pickled onions are so simple to make and add a lot of flavour to many meals. Try them alongside curries, middle eastern kebabs or meze.
You only need to make enough for the meal you are having as they do last well. If the onions sit in the vinegar for more than a day they can get a bit soft. But they are so easy to make it takes no time to knock up a batch for your next feast.
Mix all of the ingredients together in a bowl.
Leave the onions to marinade for at least 1 hour. Serve with your favourite meal.
