Spicy chicken pizza is easy to make and yet soooo yum. You will need to make the pizza dough in advance, but you can also use a frozen dough you had prepared earlier so it's no hassle.
The chicken is marinated with various herbs and spices to give a pop of flavour. We keep it simple with just chilis and corn as extra but you could add whatever vegetable you want. We have used fresh mozzarella for this recipe but you could any cheese suitable for a pizza.
This recipe is enough for one pizza which I have shown as 2 portions. I would recommend 2-3 portions per person for a main course dinner.
Add all of the ingredients for the marinade to the chicken making sure the chicken is evenly covered.
Cover and leave to marinade in the fridge for at least 30 minutes.
After 30 minutes add 1 tbsp of olive oil to a frying pan over a medium-high heat.
Add the chicken and fry for a few minutes on each side until the chicken is cooked and has a slight char.
Allow to cool before assembling the pizza to make sure you don't burn your fingers. Slice the chicken into strips.
Heat a dry pan to a medium heat. Add the sweetcorn and dry fry for a couple of minutes until the corn dries out and catches a little.
Pre-heat the oven to 220ºC. Remove a pizza dough ball from the fridge. Sprinkle a little semolina flour on a pizza shovel.
Stretch the pizza dough so that it makes a rough circle on the pizza shovel.
Add 1 tbsp of pizza sauce to the pizza dough using the back of the spoon to evenly spread the sauce.
Sprinkle the corn, red onion and green chili over the pizza base.
Slice the chicken breast and arrange the slices of chicken over the pizza base.
Slice or rip the mozzarella into thin pieces and arrange over the pizza base.
Slide the pizza into the oven using a jerking motion.
Cook for approximately 11 minutes until the base has a crunch and the cheese has caught a little.
Serve hot from the oven.
